This salad is jam-packed with delicious vegetables and flavour, making it perfect for a mid-week light and healthy dinner.

Ingredients (12)

  • 500g small kipfler potatoes
  • 2 tbs extra virgin olive oil
  • 4 eggs
  • 4 small Lebanese cucumbers, sliced lengthways into thin wedges
  • 6 mixed heirloom tomatoes, sliced
  • 250g can tuna in oil, drained
  • 2 eschalots, thinly sliced
  • 150g snow pea shoots

Olive Tapenade Dressing

  • 1/4 cup (60ml) extra virgin olive oil
  • 2 tbs red wine vinegar
  • 1/3 cup (50g) pitted kalamata olives, finely chopped
  • 1/2 garlic clove, finely grated

Method

  • 1.
    Place potatoes in a saucepan, cover with cold water and bring to the boil over high heat. Reduce heat to medium-low and cook for 15 minutes or until tender. Rinse under cold water and drain.
  • 2.
    For the olive tapenade dressing, combine all ingredients and season.
  • 3.
    Heat oil in a large pan over medium-high heat. Break eggs into pan and fry for 2 minutes or until cooked to your liking.
  • 4.
    Halve potatoes if large. Divide among plates with cucumber, tomato, tuna, eschalot and snow pea shoots. Drizzle with dressing and top with an egg to serve.
