No-bake peanut butter crème brûlée

Take the hassle out of baking, with a decadent no-bake dessert. Just plan ahead, and you'll impress any guest, without having to turn on the oven. Begin this recipe at least 4 hours ahead. You will need a 1L-capacity ovenproof dish and a kitchen blowtorch.
Ingredients (7)
- 1 3/4 cups (430ml) thickened cream
- 1/4 cup (60ml) milk
- 1 tsp vanilla bean paste
- 1/2 cup (140g) smooth peanut butter
- 6 egg yolks
- 1/3 cup (75g) caster sugar, plus extra 1/4 cup, to sprinkle
- 2 1/2 tbs cornflour

1.Place cream, milk and vanilla in a medium saucepan over medium heat. Bring to just below the boil, then remove from the heat. Add peanut butter and whisk until well combined. Set aside.

2.Place egg yolks, sugar and cornflour in a large bowl and whisk for 2 minutes until pale and creamy. Gradually whisk in the warm cream mixture until well combined.

3.Pour mixture into a clean medium saucepan over low heat and cook for 7-8 minutes until thickened. Pour into a shallow 1L-capacity ovenproof dish and chill for 4-6 hours until completely cold and set.

4.To serve, sprinkle extra sugar over the custard in an even layer and, using a kitchen blowtorch, caramelise the top. (If you don’t have a blowtorch, place under a hot grill.) Serve immediately.
