No-fuss gözleme
“Using ready-made flatbreads makes
for super-simple makeshift gözleme” - Phoebe Wood.
Ingredients (11)
- 100g baby spinach leaves, roughly chopped
- 2 spring onions, thinly sliced
- ½ tsp chilli flakes
- ½ tsp ground coriander
- 2 tbs finely chopped dill
- Finely grated zest of 1 lemon, plus extra wedges to serve
- 250g feta, crumbled
- 230g provolone dolce or mozzarella, coarsely grated
- 2 egg yolks
- 1/3 cup (80ml) extra virgin olive oil
- 4 store-bought Greek pitas or flatbreads
Method

1.Combine all ingredients, except oil and flatbreads, in a bowl and season.

2.Heat 1 tbs oil in a non-stick frying pan over medium-low heat. Working with a pita at a time, place in pan and evenly spread a quarter of the filling over half. Fold pita over to form a semi-circle. Cook for 5-6 minutes on each side until golden and crisp. Repeat with remaining oil, pitas and filling. Serve with lemon wedges.
