“Using ready-made flatbreads makes for super-simple makeshift gözleme” - Phoebe Wood.

Ingredients (11)

  • 100g baby spinach leaves, roughly chopped
  • 2 spring onions, thinly sliced
  • ½ tsp chilli flakes
  • ½ tsp ground coriander
  • 2 tbs finely chopped dill
  • Finely grated zest of 1 lemon, plus extra wedges to serve
  • 250g feta, crumbled
  • 230g provolone dolce or mozzarella, coarsely grated
  • 2 egg yolks
  • 1/3 cup (80ml) extra virgin olive oil
  • 4 store-bought Greek pitas or flatbreads

Method

  • 1.
    Combine all ingredients, except oil and flatbreads, in a bowl and season.
  • 2.
    Heat 1 tbs oil in a non-stick frying pan over medium-low heat. Working with a pita at a time, place in pan and evenly spread a quarter of the filling over half. Fold pita over to form a semi-circle. Cook for 5-6 minutes on each side until golden and crisp. Repeat with remaining oil, pitas and filling. Serve with lemon wedges.
