Nutmeg custard
This comforting custard is best served with poached or fresh fruit. For added crunch, serve with spiced biscuits.

Ingredients (6)

  • 6 eggs
  • 3/4 cup (165g) caster sugar
  • 1.125L (4 1/2 cups) milk
  • 1 teaspoon vanilla extract
  • Freshly grated nutmeg, to sprinkle
  • Poached fruit or fresh fruit (such as rhubarb and blueberry compote) and spiced biscuits, to serve

Method

  • 1.
    Preheat the oven to 160°C.
  • 2.
    Whisk eggs, sugar and milk in a bowl. Stir in vanilla, then strain into a 2-litre (8 cup) ceramic dish. Place dish in a roasting pan and add enough boiling water to come halfway up the sides of the dish. Sprinkle with freshly grated nutmeg and bake for 30 minutes (the custard should be set but still have a slight wobble).

    Cool slightly, then serve warm with fruit compote and spiced biscuits.
