“Often, when I go on camping trips, I think of the best food I can produce with limited ingredients. Cue chocolate… It’s these little oat-filled date, nut and chocolate energy balls that get me through on those adventures. I love them because they’re so quick and easy to make. You can add whatever you have, and you don’t need packaging. I have them in the car to prevent petrol-station snacking on road trips, and have them at work as a healthier pick-me-up. These are textural bliss.” – Jo Barrett

Ingredients (7)

  • 1 1/2 cups (255g) dried dates
  • 1 1/2 cups (135g) rolled oats
  • 1/4 cup (70g) peanut butter
  • 2 tbs honey
  • 3 tsp linseed
  • 1/2 cup (50g) walnuts, toasted
  • 45g dark (70%) chocolate, chopped

Method

  • 1.
    Combine the dates, oats, peanut butter, honey and linseed in a food processor and whiz until the mixture becomes sticky but still looks crumbly. It should hold together when pressed.
  • 2.
    Add the walnuts and chocolate, then pulse a few times – just enough to break the nuts down into smaller pieces while keeping some texture.
  • 3.
    Tip mixture into a bowl. Roll level 1 tbs measures into balls. Arrange balls on a tray and chill until firm.

These will keep in an airtight container in the fridge for 2-3 weeks.
