One-minute vegetarian lettuce burritos
Quite possibly the quickest and easiest dinner recipe you'll ever cook. Recipe by: Amira Georgy.
Ingredients (8)
- 3 x 125g Uncle Ben’s® Mexican Rice and Beans Cups
- 12 large cos lettuce leaves
- 1/3 cup sour cream
- 1 cup grated cheddar
- 300g can corn kernels, drained
- 1 avocado, thinly sliced
- 1/3 cup fresh coriander leaves
- Lime wedges, to serve
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Heat rice following packet directions. Fluff with a fork.

2.Meanwhile, trim 6cm off base of each lettuce leaf. Spread leaves with sour cream. Top with rice, cheese, corn, avocado and coriander. Fold over base first, then fold in sides, leaving tops exposed. Secure with toothpicks. Serve with lime wedges.
