Onion tarte tatin

Looking for something quick and easy to whip up before guests arrive? This easy tarte tatin is the perfect thing. Use that frozen puff pastry at the back of your freezer and the onions you have lying around to make this delicious French savoury snack. Ready in just a few steps, this onion tart is sure to become your next staple.
Ingredients (6)
- 2 red onions
- 2 tbs brown sugar
- 1 tbs extra virgin olive oil
- 2 tsp thyme sprigs, plus extra, to serve
- 375g sheet frozen puff pastry, just thawed (we used Carême)
- Crumbled soft goat’s cheese, to serve

1.Preheat oven to 200°C/180°C fan-forced. Grease a large baking tray and line with baking paper.

2.Cut onion into 1cm-thick slices, making sure the rings hold together. Place sugar on a saucer. Working with one onion slice at a time, brush with oil, then press into sugar and arrange, sugar-side down, on prepared tray. Season and sprinkle with thyme. Cover onions with pastry. Cut a few slits in pastry to let steam escape while cooking.

3.Bake for 30 minutes, or until pastry is golden and puffed. Carefully flip tart onto a board, then peel away and discard paper. Sprinkle tarte with goat’s cheese and extra thyme and season. Cut into portions to serve.
