Orange hotcakes
Buttermilk gives these pancakes a light texture and slightly tangy flavour. Mix up the fruit flavour if you like - apples, berries and even banana will work, too.
Ingredients (7)
- 300g (2cups) self-raising flour, sifted
- 2 tbs caster sugar
- 2 eggs
- 250ml (1 cup) buttermilk
- 3 oranges
- 40g (2tbs) melted butter
- Thick Greek yoghurt, to serve
Method

1.Place flour and sugar in a bowl and stir to combine. In a separate bowl, beat together eggs, buttermilk and the rind and juice of 1 orange. Beat together wet and dry ingredients until combined and smooth. Set aside.

2.Peel and remove pith from remaining oranges and cut into thin half slices.

3.Place a non-stick frypan over medium heat and brush with a little butter. Drop 2 tablespoons of batter in a the pan to form a hotcake and cook for 1 minute or until small holes appear on the surface. Flip and cook for 1-2 minutes on the other side. Keep warm while cooking remaining hotcakes, brushing pan with a little butter when needed. Place 2 or 3 hotcakes on each plate, add orange slices and a dollop of yoghurt. Dust with icing sugar, if desired.
