Oven roasted tomatoes
Oven roasting tomatoes releases their natural sweetness. Serve these with crusty bread and a grating of fresh parmesan.

Ingredients (3)

  • 2kg vine-ripened roma tomatoes
  • Extra virgin olive oil, to drizzle
  • 40ml (2 tbs) verjuice

Method

  • 1.
    Preheat the oven to 150 degree.
  • 2.
    Halve the tomatoes and place cut-side up on shallow baking trays. Sprinkle with sea salt, pepper and olive oil. Bake until the tomatoes begin to collapse (time will vary between 45 minutes and 1 hour and 15 minutes).
  • 3.
    Sprinkle the tomatoes with verjuice and allow to cool, adding a little more oil if more moisture is required.
