Oysters with cava dressing
Cava, a Champagne-style sparkling Spanish wine, is delicious with tapas.

Ingredients (8)

  • 24 oysters, on the half shell
  • 50g unsalted butter, melted
  • 2 slices jamon* or prosciutto, finely chopped
  • 1/2 teaspoon caster sugar

Cava dressing

  • 1/4 cup (60ml) cava or other sparkling white wine
  • 2 teaspoons sherry vinegar
  • 3 teaspoons finely chopped red onion
  • 1 tablespoon finely chopped flat-leaf parsley

Method

  • 1.
    For cava dressing, combine ingredients in a small bowl. Season and set aside for 15 minutes for flavours to infuse.
  • 2.
    Meanwhile, preheat grill to high. Sit oysters on a baking tray. Combine butter, jamon and sugar, and spoon mixture over oysters. Grill oysters for 1 1/2 minutes or until jamon is a little crispy. Remove from heat, drizzle each oyster with Cava dressing and serve immediately with a glass of chilled Cava, of course!
