Ingredients (10)

  • 2 garlic cloves
  • 5 tablespoons extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 4 large vine-ripened tomatoes, cut into chunks
  • 1 red onion, thinly sliced
  • 1 red capsicum, roasted, peeled, cut into strips
  • 1 yellow capsicum, roasted, peeled, cut into strips
  • 1 telegraph cucumber, peeled, seeded, cut into chunks
  • 4 thick slices of Italian wood-fired bread, toasted
  • 1 cup torn fresh basil leaves

Method

  • 1.
    Crush 1 clove of garlic and whisk with the oil and vinegar. Season with salt and freshly ground black pepper.
  • 2.
    Place the tomato, onion, capsicum and cucumber in a bowl and pour over the dressing. Cover and set aside at room temperature for 1 hour.
  • 3.
    Grill or chargrill the bread until golden and while still warm, rub with the remaining garlic clove (cut it in half first).
  • 4.
    Break bread into bite-sized pieces and add to salad with the basil. Toss well before serving.
