Ingredients (10)
- 2 garlic cloves
- 5 tablespoons extra virgin olive oil
- 3 tablespoons red wine vinegar
- 4 large vine-ripened tomatoes, cut into chunks
- 1 red onion, thinly sliced
- 1 red capsicum, roasted, peeled, cut into strips
- 1 yellow capsicum, roasted, peeled, cut into strips
- 1 telegraph cucumber, peeled, seeded, cut into chunks
- 4 thick slices of Italian wood-fired bread, toasted
- 1 cup torn fresh basil leaves
Method

1.Crush 1 clove of garlic and whisk with the oil and vinegar. Season with salt and freshly ground black pepper.

2.Place the tomato, onion, capsicum and cucumber in a bowl and pour over the dressing. Cover and set aside at room temperature for 1 hour.

3.Grill or chargrill the bread until golden and while still warm, rub with the remaining garlic clove (cut it in half first).

4.Break bread into bite-sized pieces and add to salad with the basil. Toss well before serving.
