Passionfruit and coconut custards

These simple but delicious custards are so impressive. You can even make them ahead of time.
Ingredients (6)
- 4 passionfruit, halved
- 4 eggs
- 3/4 cups (185ml) coconut milk
- 1/4 cup (55g) caster sugar
- 2 tbs Malibu or other coconut-flavoured white rum (optional)
- Asian coconut biscuits, to serve
Method

1.Preheat the oven to 180°C.

2.Scoop the flesh from 3 passionfruit and strain through a sieve, discarding the seeds.

3.Beat together eggs, coconut milk, sugar, Malibu (if using) and strained passionfruit juice until smooth. Pour into four 1-cup (250ml) heatproof dishes, then place in a roasting pan. Pour enough boiling water into the pan to come halfway up the sides of the dishes and bake for 25-30 minutes until custards are just set. Cool to room temperature, then chill for 30 minutes.

4.Spoon remaining passionfruit pulp over custards and serve with coconut biscuits.
