Passionfruit and coconut custards
Passionfruit and coconut custards
These simple but delicious custards are so impressive. You can even make them ahead of time. 

Ingredients (6)

  • 4 passionfruit, halved
  • 4 eggs
  • 3/4 cups (185ml) coconut milk
  • 1/4 cup (55g) caster sugar
  • 2 tbs Malibu or other coconut-flavoured white rum (optional)
  • Asian coconut biscuits, to serve

Method

  • 1.
    Preheat the oven to 180°C.
  • 2.
    Scoop the flesh from 3 passionfruit and strain through a sieve, discarding the seeds.
  • 3.
    Beat together eggs, coconut milk, sugar, Malibu (if using) and strained passionfruit juice until smooth. Pour into four 1-cup (250ml) heatproof dishes, then place in a roasting pan. Pour enough boiling water into the pan to come halfway up the sides of the dishes and bake for 25-30 minutes until custards are just set. Cool to room temperature, then chill for 30 minutes.
  • 4.
    Spoon remaining passionfruit pulp over custards and serve with coconut biscuits.
