Passionfruit curd will keep in the fridge for up to 1 month.
Ingredients (6)
- 4 egg yolks
- 1/2 cup (110g) caster sugar
- 100ml lemon juice
- Finely grated zest of 1 lemon
- 3 passionfruit, pulp removed
- 60g unsalted butter
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Whisk together yolks and sugar until combined, then place in a saucepan with the remaining ingredients. Cook, stirring constantly, over a very low heat until mixture is thick. Pour into a 250ml sterilised jar, seal and set aside to cool.
