Peanut butter biscuits
Move over choc-chip and let peanut butter cookies take centre stage.
Ingredients (8)
- 100g unsalted butter
- 100g peanut butter
- 100g caster sugar
- 100g brown sugar
- 2 eggs, lightly beaten
- 1 2/3 cups (250g) plain flour
- 2 teaspoons baking powder
- 100g unsalted peanuts
Method

1.Preheat the oven to 180°C.

2.In a food processor, whiz the butter, peanut butter and sugars until light.

3.Add the eggs and whiz again.

4.Sift in the flour and baking powder, stirring well, then fold in the peanuts. Drop heaped tablespoonfuls onto non-stick or baking paper-lined biscuit trays, allowing about 2cm for spreading.

5.Bake the cookies for 10 minutes or until lightly golden. Cool for 5 minutes on the trays before transferring to a wire rack to cool. When the cookies are cool, store in an airtight container.
