Move over choc-chip and let peanut butter cookies take centre stage.

Ingredients (8)

  • 100g unsalted butter
  • 100g peanut butter
  • 100g caster sugar
  • 100g brown sugar
  • 2 eggs, lightly beaten
  • 1 2/3 cups (250g) plain flour
  • 2 teaspoons baking powder
  • 100g unsalted peanuts

Method

  • 1.
    Preheat the oven to 180°C.
  • 2.
    In a food processor, whiz the butter, peanut butter and sugars until light.
  • 3.
    Add the eggs and whiz again.
  • 4.
    Sift in the flour and baking powder, stirring well, then fold in the peanuts. Drop heaped tablespoonfuls onto non-stick or baking paper-lined biscuit trays, allowing about 2cm for spreading.
  • 5.
    Bake the cookies for 10 minutes or until lightly golden. Cool for 5 minutes on the trays before transferring to a wire rack to cool. When the cookies are cool, store in an airtight container.
