Peas and broad beans draped with slices of prosciutto make a visually striking and delicious Christmas side.

Ingredients (10)

  • 1kg podded fresh or frozen broad beans
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 1 garlic clove, finely chopped
  • 350g fresh or frozen peas
  • 100ml dry white wine
  • 150ml chicken stock
  • 4 bay leaves
  • 2 tablespoons chopped flat-leaf parsley leaves
  • 8 thin slices prosciutto

Method

  • 1.
    Blanch broad beans in boiling, salted water for 2 minutes or until just tender. Drain and refresh.
  • 2.
    Place oil in a pan over medium-low heat. Cook onion and garlic, stirring, for 2-3 minutes until just softened. Add peas, wine, stock and bay leaves, then bring to a simmer and cook for 5 minutes or until most of the liquid has evaporated. Add the beans and warm through. Season well, then stir through parsley. Transfer to a platter and serve with prosciutto on top.
