Peas and broad beans with prosciutto
Peas and broad beans draped with slices of prosciutto make a visually striking and delicious Christmas side.
Ingredients (10)
- 1kg podded fresh or frozen broad beans
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 1 garlic clove, finely chopped
- 350g fresh or frozen peas
- 100ml dry white wine
- 150ml chicken stock
- 4 bay leaves
- 2 tablespoons chopped flat-leaf parsley leaves
- 8 thin slices prosciutto

1.Blanch broad beans in boiling, salted water for 2 minutes or until just tender. Drain and refresh.

2.Place oil in a pan over medium-low heat. Cook onion and garlic, stirring, for 2-3 minutes until just softened. Add peas, wine, stock and bay leaves, then bring to a simmer and cook for 5 minutes or until most of the liquid has evaporated. Add the beans and warm through. Season well, then stir through parsley. Transfer to a platter and serve with prosciutto on top.
