Ingredients (9)

  • 1 tsp sesame oil
  • 1/2 tsp grated fresh ginger
  • 26cm pizza base or 4 individual pizza bases
  • 2 tbs hoisin sauce, plus extra to drizzle
  • 2 cups baby spinach leaves, rinsed
  • 1 pack Luv-A-Duck Peking Roast Duck Legs* (contains 2 legs)
  • 1/4 red onion, thinly sliced
  • 1/3 cup grated mozzarella cheese
  • 1 cup baby coriander leaves

Method

  • 1.
    Preheat oven to 200ºC (or set a pizza oven to level 2 1/2). Combine oil and ginger in a bowl and brush over pizza base, then spread with hoisin. Wilt still-damp spinach in a pan over high heat for 1 minute. Drain on paper towel, then scatter over base. Cut duck into bitesized pieces, discarding bones, then scatter over base. Sprinkle with onion and cheese.

    Bake for 4-5 minutes until base is crisp and cheese is bubbling. Top with coriander, drizzle with hoisin, then slice and serve warm or at room temperature.
