Peking duck pizza
Ingredients (9)
- 1 tsp sesame oil
- 1/2 tsp grated fresh ginger
- 26cm pizza base or 4 individual pizza bases
- 2 tbs hoisin sauce, plus extra to drizzle
- 2 cups baby spinach leaves, rinsed
- 1 pack Luv-A-Duck Peking Roast Duck Legs* (contains 2 legs)
- 1/4 red onion, thinly sliced
- 1/3 cup grated mozzarella cheese
- 1 cup baby coriander leaves

1.Preheat oven to 200ºC (or set a pizza oven to level 2 1/2). Combine oil and ginger in a bowl and brush over pizza base, then spread with hoisin. Wilt still-damp spinach in a pan over high heat for 1 minute. Drain on paper towel, then scatter over base. Cut duck into bitesized pieces, discarding bones, then scatter over base. Sprinkle with onion and cheese.

2.Bake for 4-5 minutes until base is crisp and cheese is bubbling. Top with coriander, drizzle with hoisin, then slice and serve warm or at room temperature.
