Ingredients (2)

  • 2kg desiree or pontiac potatoes
  • 3 tbs extra virgin olive oil

Method

  • 1.
    Preheat oven to 220°C/200°C fan-forced. Peel and cut potatoes into 4cm pieces. Place potatoes in a large saucepan and pour over boiling water. Cook for six minutes over medium heat. Drain.
  • 2.
    Return the potatoes to the pan, place a lid on the pan and shake vigorously (this roughs up the surface, for a crispier end result). Season with salt flaks to taste.
  • 3.
    Heat 3 tbs oil in a baking tray, add potatoes to the tray and roast, turning occasionally, for 40-50 minutes. Season with salt flakes and serve immediately.
