Pickled cherry compote
This cherry compote is a fantastic accompaniment to rillettes or pâté.
Ingredients (6)
- 400g firm cherries, stalks removed
- 200ml red wine
- 125g brown sugar, plus extra to taste
- 50ml red wine vinegar, plus extra to taste
- 6 black peppercorns
- 2 cloves
Method

1.Pit the cherries if desired. Combine the red wine, brown sugar, wine vinegar, black peppercorns and cloves in a wide-based, non-reactive (stainless steel) saucepan. Season with salt and bring to the boil over medium heat.

2.Boil for 5 minutes, then add the cherries and simmer over low heat for 15-20 minutes or until the liquid is reduced to a syrup. Adjust the sweet-sour balance to taste with extra sugar and vinegar, allow to cool, then store in an airtight jar in the fridge.
