With a little forward planning, you can accompany many a meal with this red pickled onion recipe.
Ingredients (5)
- 1 red onion, sliced
- 1 baby beetroot, trimmed, scrubbed
- 1 cup coriander leaves
- 2 tablespoons caster sugar
- 1/4 cup (60ml) red wine vinegar
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Place the onion in a saucepan over medium heat. Quarter beetroot and add to pan with the coriander, sugar and 1 tablespoon salt. Cover with red wine vinegar and 1/4 cup (60ml) water and bring to a simmer. Remove from heat and transfer to a bowl. Cool slightly, cover and chill overnight, then serve.
