Pineapple and lime agua fresca
Your guests will go mad for David Prior's Mexican-inspired refreshing pineapple cocktails.
Ingredients (5)
- 1kg pineapple, peeled, core removed, chopped
- Juice of 6 limes
- 1 tablespoon caster sugar
- 1/4 cup mint leaves, torn, plus extra whole leaves to serve
- 1/2 cup (125ml) dark rum
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Line a baking tray with baking paper. Arrange three-quarters of the pineapple on the tray and place in the freezer for 2-3 hours until slightly frozen. Place the remaining pineapple in the fridge to chill.

2.Place all the pineapple in a blender with lime juice, sugar, mint and rum, and blend until smooth (add some chilled water if the consistency is too thick). Pour into a jug, garnish with extra mint leaves and serve immediately in chilled glasses.
