Looking for the perfect summer treat? This chargrilled pineapple hits all the sweet spots with the zingy lime sorbet and chilli syrup cutting through the rich juiciness. Easy to whip up and serve in just over 10 minutes, this is your new fast summer dessert for entertaining.
Ingredients (6)
- 1 small sweet pineapple, top intact, peeled and cut lengthways into thick wedges
- Baby mint leaves, to serve
- Lime sorbet, to serve
Chilli syrup
- 250g caster sugar
- 1 long red chilli, seeds removed, finely chopped
- 2 tbs lime juice, or to taste

1.To make the syrup, place sugar, chilli and 1/4 cup (60ml) water in a small saucepan over medium heat. Cook, stirring occasionally, until sugar has dissolved. Remove from heat and stir in lime juice. Refrigerate until cooled.

2.Preheat a barbecue flatplate or large non-stick frypan over high heat. Brush pineapple with syrup, reserving remainder to serve, and cook, turning frequently, for 6-8 minutes, until charred all over.

3.To serve, place pineapple on a large serving platter, drizzle with remaining chilli syrup, scatter with mint leaves and spoon over lime sorbet.
