Nutty, silky and quietly indulgent, this pistachio martini is a dessert cocktail in disguise. With pistachio very much the flavour of the moment, this drink leans into the trend in the best way possible. A spoonful of pistachio paste is the secret ingredient, adding richness, depth and an irresistible, velvety finish.
Ingredients (8)
- 1½ tbs smooth pistachio paste
- 15ml maple syrup
- 15ml fresh lemon juice
- 30ml thickened cream
- 20ml cognac
- 30ml gin
- Ice cubes, to shake
- Crushed pistachio, to garnish

1.Add all ingredients, other than the ice and crushed pistachio, to a cocktail shaker. Dry shake (without ice) until the pistachio paste has emulsified.

2.Add ice cubes and shake until the outside of the cocktail shaker is frosty. Strain into a martini glass.

3.Top with crushed pistachio to serve.
