Chicken zebra sandwiches
Bright punchy lime mayonnaise adds zing to these elegant little poached chicken sandwiches.

Ingredients (11)

  • 1/2 bunch flat-leaf parsley sprigs
  • 1 tbs whole black peppercorns
  • 2 spring onions, roughly chopped
  • 3 x 175g chicken breast fillets
  • 1 loaf white bread, sliced
  • 1 small iceberg lettuce, shredded
  • 2 cucumbers, thinly sliced into ribbons
  • 1 cup coriander leaves
  • Lime mayonnaise
  • 1 cup (250g) whole-egg mayonnaise
  • Finely grated zest of 1 lime, plus 2 tbs juice

Method

  • 1.
    Place the parsley, peppercorns, spring onion and 1 tablespoon salt in a large saucepan filled with cold water and bring to the boil.
  • 2.
    Add the chicken breasts, turn off the heat and cover with the lid. Stand for 1 hour to poach until cooked through.
  • 3.
    Remove the chicken from poaching liquid, then shred using 2 forks.
  • 4.
    Meanwhile, for the lime mayonnaise, place the mayonnaise, lime zest and juice in a bowl and stir to combine. Season to taste with sea salt.
  • 5.
    To assemble the sandwiches, spread 1 slice of bread with some lime mayonnaise, then top with poached chicken, shredded lettuce, cucumber ribbons and coriander leaves.
  • 6.
    Top with another slice of bread. Repeat with the remaining bread, mayonnaise, lettuce, chicken, cucumber and coriander leaves, then serve.
