This quirky desert is a crowd pleaser.

Ingredients (10)

  • 175g self-raising flour
  • 125g instant polenta
  • 100g almond meal
  • 1 lemon, rind grated
  • 175g unsalted butter
  • 100g caster sugar
  • 250g jam (we used cherry)
  • 100g flaked almonds
  • 1 egg
  • Icing sugar, to dust

Method

  • 1.
    Preheat oven to 180°C. Grease a 20 x 30cm lamington tray.
  • 2.
    Sift the flour and a pinch of salt into a large bowl. Add the polenta, almond meal and grated rind.
  • 3.
    Carefully melt the butter and sugar in a saucepan, then pour over the dry ingredients and stir until well combined. Press two thirds of the mixture into the prepared tray, then spread the jam over in an even layer.
  • 4.
    Place the remaining mixture in a food processor and add the flaked almonds and egg. Pulse for a few seconds until just combined. Sprinkle over the top of the jam and bake in the oven for 30-40 minutes until golden brown. Cut into bars while warm. Dust with icing sugar to serve.
