Polenta jam bars
This quirky desert is a crowd pleaser.
Ingredients (10)
- 175g self-raising flour
- 125g instant polenta
- 100g almond meal
- 1 lemon, rind grated
- 175g unsalted butter
- 100g caster sugar
- 250g jam (we used cherry)
- 100g flaked almonds
- 1 egg
- Icing sugar, to dust

1.Preheat oven to 180°C. Grease a 20 x 30cm lamington tray.

2.Sift the flour and a pinch of salt into a large bowl. Add the polenta, almond meal and grated rind.

3.Carefully melt the butter and sugar in a saucepan, then pour over the dry ingredients and stir until well combined. Press two thirds of the mixture into the prepared tray, then spread the jam over in an even layer.

4.Place the remaining mixture in a food processor and add the flaked almonds and egg. Pulse for a few seconds until just combined. Sprinkle over the top of the jam and bake in the oven for 30-40 minutes until golden brown. Cut into bars while warm. Dust with icing sugar to serve.
