Anthony uses a charcoal barbecue for this recipe. If you don’t have one, use a regular gas barbecue or chargrill pan.

Ingredients (4)

  • 1/3 cup (80ml) extra virgin olive oil
  • 3 garlic cloves, crushed
  • 1 bunch sage, leaves finely chopped
  • 750g boneless pork neck, cut into 1cm-thick slices

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Combine oil, garlic, sage and 1 tsp salt in a bowl, then season with freshly ground black pepper. Add pork and turn to coat, then cover and chill for 3 hours to marinate.
  • 2.
    Preheat a barbecue to medium. Thread 2-3 pieces marinated pork onto 12 metal skewers (if using bamboo skewers, soak in water for 1 hour before using). Cook skewers for 3-4 minutes each side until slightly charred and cooked through.
