Pork, fennel and apple sausage rolls
Pork and fennel play nicely together in this homemade favourite.
Ingredients (12)
- 80g unsalted butter
- 3 Granny Smith apples, peeled, cored, chopped into 1cm dice
- 1 small fennel bulb, trimmed, finely chopped
- 1 tsp allspice
- ½ cup (125ml) Calvados
- 2 tbs finely chopped flat-leaf parsley
- 1 tbs Dijon mustard
- 1kg pork and fennel sausage mince
- 1 egg, lightly beaten
- Fennel seeds, to scatter
- 5 sheets frozen puff pastry, defrosted
- 1 egg, lightly beaten, for eggwash

1.Place butter in a large frying pan over high heat. Add apple, fennel and allspice. Cook for 5-6 minutes until apple and fennel begin to caramelise. Add Calvados, reduce to low and cook for 6-8 minutes until apple and fennel are caramelised. Chill to cool completely.

2.Place apple mixture in a bowl with parsley, mustard and mince. Season and mix to combine. Divide the mixture into 5 equal portions.

3.Preheat oven to 220°C. Line 2 baking trays with baking paper. Place a portion of mince down the centre of 1 pastry sheet pastry and brush 1 edge with egg. Fold over pastry to enclose, leaving 1 single flat edge. Press edge firmly to seal, then trim to leave a 2cm edge. Discard excess pastry. Brush with eggwash, score the top and scatter with fennel seeds. Repeat with remaining pastry sheets and filling.

4.Bake for 30-35 minutes until golden. Remove from oven and, using a serrated knife, cut in half. Serve immediately
