Porridge with air fryer caramelised bananas

A traditional porridge base and a sweet twist. Caramelised bananas made in the air fryer bring a golden, toffee-like richness, finished with a drizzle of maple syrup for extra indulgence.

Ingredients (6)
- 1 cup (90g) rolled oats
Caramelised bananas
- 2 large ripe banana, halved lengthways
- Melted butter, to brush
- 1 1/2 tbs brown sugar, plus extra to serve
- 1 tsp ground cinnamon
- Maple syrup, to drizzle
Method

1.Combine oats with 2 cups (500ml) water and a pinch of salt flakes in a small saucepan over medium heat. Bring to a gentle simmer and cook, stirring occasionally, for 5-7 minutes until thickened and creamy. Remove from the heat and cover to keep warm.

2.Meanwhile, cook the caramelised bananas. Brush the banana halves with melted butter, then sprinkle generously with sugar and cinnamon. Place in the air fryer basket, cut-side up, and cook on 180°C for 8-10 minutes or until golden, soft and lightly caramelised.

3.Divide the warm porridge between bowls. Top with the caramelised bananas, a sprinkle of brown sugar and a drizzle of maple syrup to serve.
