Porridge is the perfect winter breakfast. Not only is it warming and filling, it’s also super easy to make when you’re still half asleep. Give our porridge recipe a try and get your morning off to a satisfying start.

Porridge, three ways

Porridge is simple, but it doesn't have to be ordinary. Try these three different toppings for a top start to your day:

1. Berries and yoghurt

Make a quick compote by simmering frozen mixed berries, a dash of vanilla bean paste and a spoonful of caster sugar until fruit is soft and syrup has thickened slightly.

Serve porridge with a dollop of yoghurt and some berry compote.

2. Banana, yoghurt, honey and brown sugar

Serve porridge with a dollop of yoghurt, sliced banana, drizzle of honey and a sprinkle of brown sugar.

3. Cinnamon apples and sultanas with maple syrup nuts and cream

Cook peeled apple wedges in a large frypan with a generous knob of butter until golden. Add sultanas, brown sugar and lemon juice and cook until sugar melts and sultanas are plump. 

Toss chopped nuts (we used hazelnut, walnut and almonds) in a little maple syrup then roast in a 200°C/180°C fan-forced oven for 8-10 mins, tossing halfway through.

Serve porridge with apples and sultanas, a sprinkle of nuts and and a drizzle of thickened cream.

Ingredients (2)

  • 1 cup (90g) rolled oats
  • Pure cream or milk and brown sugar, to serve (optional)

Method

  • 1.
    Place oats and 2 1/4 cups (560ml) water in a medium saucepan over high heat. Bring to the boil. Reduce heat to medium. Simmer, stirring constantly, for 5-7 minutes until mixture thickens and oats are tender (mixture should coat the back of a wooden spoon).
  • 2.
    Remove from the heat. Divide mixture between serving bowls. Drizzle with cream or milk and sprinkle with sugar, if using. Serve immediately.
