Ingredients (12)

  • 450g desiree potatoes, or pontiac potatoes, peeled, diced
  • 1 tablespoon plain flour
  • 3 eggs
  • 1 egg white
  • 50ml thick cream
  • 50ml milk
  • Grated fresh nutmeg, to season
  • 2 tablespoons vegetable oil
  • Sour cream, to serve
  • Smoked salmon, to serve
  • Lumpfish roe*, to serve
  • Chopped chives, to garnish

Method

  • 1.
    Preheat the oven to 110°C.
  • 2.
    Boil or steam potatoes in water until soft. Drain well. Push through a potato ricer or mash until smooth. Transfer to a large bowl, and add the flour, eggs, egg white, cream and milk. Season well with salt and pepper and grated nutmeg and stir well to combine.
  • 3.
    Heat oil in a small non-stick blini pan* or small frying pan. When it's very hot, add a quarter of the mixture. Reduce heat to very low and cover the pan with a baking tray. Cook for 2-3 minutes each side until golden brown. Place on a baking tray in the oven while you cook the remaining pancakes.
  • 4.
    Place a pancake on each plate, top with salmon, sour cream and roe. Garnish with chives.
