Potato pancakes with smoked salmon
Ingredients (12)
- 450g desiree potatoes, or pontiac potatoes, peeled, diced
- 1 tablespoon plain flour
- 3 eggs
- 1 egg white
- 50ml thick cream
- 50ml milk
- Grated fresh nutmeg, to season
- 2 tablespoons vegetable oil
- Sour cream, to serve
- Smoked salmon, to serve
- Lumpfish roe*, to serve
- Chopped chives, to garnish

1.Preheat the oven to 110°C.

2.Boil or steam potatoes in water until soft. Drain well. Push through a potato ricer or mash until smooth. Transfer to a large bowl, and add the flour, eggs, egg white, cream and milk. Season well with salt and pepper and grated nutmeg and stir well to combine.

3.Heat oil in a small non-stick blini pan* or small frying pan. When it's very hot, add a quarter of the mixture. Reduce heat to very low and cover the pan with a baking tray. Cook for 2-3 minutes each side until golden brown. Place on a baking tray in the oven while you cook the remaining pancakes.

4.Place a pancake on each plate, top with salmon, sour cream and roe. Garnish with chives.
