Potato salad with green goddess dressing & beans

Asked to bring a plate? This fresh and light potato salad is served with a herby green goddess dressing for an easy side that's bound to outshine main course.
Ingredients (11)
- 600g kipler potatoes, scrubbed
- 1 bunch radish, trimmed, thinly sliced
- 100g green beans, blanched
Green goddess dressing
- 1/2 bunch tarragon, leaves picked, chopped
- 1/2 bunch parsley, leaves picked, chopped
- 1/2 bunch coriander, leaves picked, chopped
- Juice and zest of 1 lemon
- 1/4 cup (60ml) buttermilk
- 1 cup (300g) mayonnaise
- 3 anchovy fillets, drained, chopped
- 1/4 cup pine nuts, toasted, finely chopped

1.Place potatoes in a medium saucepan, cover with salted water and bring to the boil over high heat. Reduce heat and simmer for 20 minutes or until just tender. Drain well. When potatoes are cool enough to handle, peel and cut in half lengthways.

2.Meanwhile, for the green goddess dressing, place all the ingredients into blender and whiz until smooth. Set aside.

3.Add potatoes to a large bowl with the dressing and gently combine. Transfer to a serving platter, top with radish and beans and scatter with pine nuts.
