Potato and smoked ham salad
Ingredients (10)
- 750g waxy potatoes (such as kipflers)
- 1-2 thick slices (about 300g) smoked ham
- 1 tablespoon chopped parsley, plus extra to serve
- 2 tablespoons finely chopped mint
- 1/2 tablespoon grated lemon rind
- 2 tablespoons lemon juice
- 1/3 cup (80ml) olive oil
- Baby spinach leaves, to serve
- 3/4 cup (190g) mayonnaise
- 2 hard-boiled eggs, quartered
Method

1.Place the potatoes in boiling salted water and cook until just tender when pierced with a skewer. Drain the potatoes and allow to cool. When cool, peel potatoes if desired and cut into quarters. Cut the ham into small chunks.

2.Combine the parsley, mint, lemon rind and juice, and olive oil in a large bowl. Season with salt and pepper. Add the ham and potatoes, and toss gently until well coated.

3.To serve, line bowls with baby spinach leaves, top with salad, then spoon mayonnaise over. Scatter with the eggs and extra parsley.
