Ingredients (10)

  • 750g waxy potatoes (such as kipflers)
  • 1-2 thick slices (about 300g) smoked ham
  • 1 tablespoon chopped parsley, plus extra to serve
  • 2 tablespoons finely chopped mint
  • 1/2 tablespoon grated lemon rind
  • 2 tablespoons lemon juice
  • 1/3 cup (80ml) olive oil
  • Baby spinach leaves, to serve
  • 3/4 cup (190g) mayonnaise
  • 2 hard-boiled eggs, quartered

Method

  • 1.
    Place the potatoes in boiling salted water and cook until just tender when pierced with a skewer. Drain the potatoes and allow to cool. When cool, peel potatoes if desired and cut into quarters. Cut the ham into small chunks.
  • 2.
    Combine the parsley, mint, lemon rind and juice, and olive oil in a large bowl. Season with salt and pepper. Add the ham and potatoes, and toss gently until well coated.
  • 3.
    To serve, line bowls with baby spinach leaves, top with salad, then spoon mayonnaise over. Scatter with the eggs and extra parsley.
