Ingredients (10)

  • 8 eggs
  • 1/3 cup (80ml) fish sauce
  • 1/2 cup (125ml) peanut oil
  • 100ml lime juice
  • 1 long red chilli, seeds removed, finely chopped, plus extra sliced to serve
  • 2 tsp caster sugar
  • 20 medium cooked king prawns, peeled (tails intact), deveined
  • 1 carrot, shredded (we used a julienne peeler)
  • 1 Lebanese cucumber, thinly sliced
  • Mint leaves & coriander, to serve

Method

  • 1.
    Preheat oven to 220°C.

    Place eggs and fish sauce in a bowl and whisk to combine. Heat half the oil in a large non-stick frypan over high heat. Pour egg mixture into pan and cook for 1-2 minutes until the edges start to set. Place pan in oven and cook for 12-15 minutes until lightly golden on top and egg is cooked through.

    Meanwhile, place the garlic, lime juice, chilli and sugar and remaining 1/4 cup (60ml) oil in a small food processor. Whiz until finely chopped and combined.
  • 4.
    Place prawns, carrot and cucumber in a bowl with the dressing, season to taste and toss to combine.
  • 5.
    Transfer omelette to a large serving plate and top with prawn salad. Scatter over mint and coriander to serve.
