Prawn cocktail buns with chipotle and chive mayo

Move over sandwiches. These prawn buns are perfect for summer entertaining.
Ingredients (10)
- 16 small green prawns, peeled (tails intact), deveined
- 1/4 cup (60ml) extra virgin olive oil
- 4 milk buns, split on top
- 1 cup watercress, leaves picked
- 1 bunch radishes, thinly sliced
- 2 avocado, skin removed, sliced
Chipotle and chive mayo
- 1 tbs chipotle chillies in adobo sauce, finely chopped
- 1/4 cup (75g) whole egg mayonnaise
- 1/2 bunch of chives, plus extra, to serve
- Juice of 1/2 lime, plus lime wedges, to serve

1.For the chipotle and chive mayo, combine all the ingredients with 1 tsp salt flakes in a bowl. Set aside until required.

2.Toss prawns in oil and season. Place a chargrill pan over medium-high heat. Cook prawns, turning once, for 3-4 minutes, until charred.

3.Spread 1 tbs chipotle chive mayo inside each bun. Divide prawns, watercress, radish and avocado among buns and serve with lime wedges.
