Move over sandwiches. These prawn buns are perfect for summer entertaining.

Ingredients (10)

  • 16 small green prawns, peeled (tails intact), deveined
  • 1/4 cup (60ml) extra virgin olive oil
  • 4 milk buns, split on top
  • 1 cup watercress, leaves picked
  • 1 bunch radishes, thinly sliced
  • 2 avocado, skin removed, sliced

Chipotle and chive mayo

  • 1 tbs chipotle chillies in adobo sauce, finely chopped
  • 1/4 cup (75g) whole egg mayonnaise
  • 1/2 bunch of chives, plus extra, to serve
  • Juice of 1/2 lime, plus lime wedges, to serve

Method

  • 1.
    For the chipotle and chive mayo, combine all the ingredients with 1 tsp salt flakes in a bowl. Set aside until required.
  • 2.
    Toss prawns in oil and season. Place a chargrill pan over medium-high heat. Cook prawns, turning once, for 3-4 minutes, until charred.
  • 3.
    Spread 1 tbs chipotle chive mayo inside each bun. Divide prawns, watercress, radish and avocado among buns and serve with lime wedges.
