School prawn crudo

Perfect for sharing, this easy prawn entree will bring Mediterranean magic to any meal, with its fresh prawns, zesty lemon, herbs, chilli and olive oil. Add fresh crusty bread for mopping up and it will be gone in a flash.
Ingredients (8)
- 750g fresh cooked school prawns
- Juice of 1 large lemon
- 1 tsp chilli flflakes
- 1 tsp crushed fennel seeds
- 1 tbs marjoram leaves
- 1/3 cup (80ml) extra virgin olive oil
- Crusty bread to serve (optional)
- Cold beer to serve (optional)

1.Rinse prawns under cold water, then peel. This will take a while, but it’s worth it.

2.Transfer to a medium bowl and gently mix with lemon juice, chilli flflakes, fennel seeds, half the marjoram and 2 tsp salt flakes. Arrange in a serving bowl, drizzle with olive oil and sprinkle the remaining marjoram over the top.

3.Serve immediately with crusty bread and cold beer, if desired.
