This fresh and vibrant broth is healthy and easy to make.

Ingredients (8)

  • 1L (4 cups) chicken stock
  • 1/3 cup (80ml) light soy sauce
  • 2 star anise
  • 4 slices fresh ginger
  • 350g packet frozen prawn wontons
  • 2 baby bok choy, sliced thickly
  • 1 long red chilli, seeds removed, thinly sliced
  • 1/2 cup coriander leaves

Method

  • 1.
    Place the stock, soy, star anise and ginger in a saucepan with 2 cups (500ml) water. Bring to the boil, then simmer over low heat for 15 minutes until fragrant. Discard the ginger.
  • 2.
    Increase heat to medium, then stir the wontons into the simmering stock. Once they rise to the surface, cook for a further 1 minute, then add the bok choy. Continue to cook for a further 1 minute or until the wontons are cooked through and greens are wilted. Divide the soup, wontons and bok choy among bowls, then serve garnished with sliced chilli and coriander.
