Prawns with bacon and herb mayonnaise

Ingredients (8)
- 4 bacon rashers
- 1 cup (300g) whole egg mayonnaise
- 1/2 cup (120g) light sour cream
- 1 garlic clove, finely chopped
- 1 tablespoon finely chopped chives
- 1 tablespoon finely chopped tarragon
- 500g cooked prawns
- Lemon wedges, to serve
Method

1.Place a frypan over medium-high heat. Add the bacon and cook, turning, for 4-5 minutes until crisp. Drain on paper towel and allow to cool, then finely chop.

2.Combine bacon, mayonnaise, sour cream, garlic, chives and tarragon in a bowl, then season to taste.

3.Fill glasses or small bowls with prawns and serve with the bacon and herb mayonnaise, and lemon wedges.
