Prawns with bacon and herb mayonnaise
This speedy seafood starter is a cinch for effortless summer entertaining.

Ingredients (8)

  • 4 bacon rashers
  • 1 cup (300g) whole egg mayonnaise
  • 1/2 cup (120g) light sour cream
  • 1 garlic clove, finely chopped
  • 1 tablespoon finely chopped chives
  • 1 tablespoon finely chopped tarragon
  • 500g cooked prawns
  • Lemon wedges, to serve

Method

  • 1.
    Place a frypan over medium-high heat. Add the bacon and cook, turning, for 4-5 minutes until crisp. Drain on paper towel and allow to cool, then finely chop.
  • 2.
    Combine bacon, mayonnaise, sour cream, garlic, chives and tarragon in a bowl, then season to taste.
  • 3.
    Fill glasses or small bowls with prawns and serve with the bacon and herb mayonnaise, and lemon wedges.
