Prawns chipotle

Ingredients (10)

  • 1/4 cup (60ml) olive oil
  • 1 onion, chopped
  • 2 tablespoons tomato paste
  • 4 garlic cloves, crushed
  • 820g canned crushed tomatoes
  • 2 dried chipotle chillies*, or 1 long red chilli and 2 teaspoons smoked paprika (pimenton)*
  • 1/2 cup (125ml) cola
  • 2 teaspoons chopped fresh oregano (or 1/2 teaspoon dried oregano)
  • Juice of 1 lime
  • 20 green prawns, peeled, deveined, tails intact

Method

  • 1.
    Heat 1 tablespoon of the oil in a frypan over medium heat, add onion and cook for 5 minutes, stirring until softened and golden. Add tomato paste and garlic, cook for a further minute, then add tomatoes. Transfer to a blender with the chillies, cola, oregano and lime juice and blend until smooth. Season with salt and pepper, then set aside.

    Heat remaining oil in a frypan over medium heat, add prawns and cook for about 1 minute each side until just opaque. Remove and set aside. Add sauce to pan and simmer for 5 minutes, then return prawns to sauce and cook for a further 2 minutes.

    Serve garnished with chopped fresh oregano, if desired.
