"This salad dish is made especially to celebrate the Lunar New Year. The ingredients are tossed together at the table – the higher the ingredients are tossed the more prosperous your coming year will be. Stand up while you are doing it and make sure you wish everyone a happy new year!" – Jerry Mai

Ingredients (11)

  • 200g sashimi-grade salmon, sliced
  • 1 carrot, julienned
  • 1 small daikon, julienned
  • 1 beetroot, julienned
  • 150g wakame seaweed salad (from Asian grocers)
  • 200g pomelo (from Asian grocers, substitute pink grapefruit), sliced
  • 8 wonton wrappers (from Asian grocers), cut 1cm strips, shallow-fried until crispy

Dressing

  • 600ml store-bought plum sauce (from Asian grocers)
  • 120ml light soy sauce
  • 10ml sesame oil
  • 1 tbs white sesame seeds

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    For the dressing, place all ingredients and 100ml water in a bowl and stir to combine. Set aside.
  • 2.
    Arrange the salmon in a circle on a serving plate. Combine the carrot, daikon, beetroot, seaweed salad and pomelo in a bowl and toss to combine. Pile the salad into the centre of the serving plate and drizzle with dressing. Top with fried wonton wrappers, to serve.
