Ingredients (11)
- 200g sashimi-grade salmon, sliced
- 1 carrot, julienned
- 1 small daikon, julienned
- 1 beetroot, julienned
- 150g wakame seaweed salad (from Asian grocers)
- 200g pomelo (from Asian grocers, substitute pink grapefruit), sliced
- 8 wonton wrappers (from Asian grocers), cut 1cm strips, shallow-fried until crispy
Dressing
- 600ml store-bought plum sauce (from Asian grocers)
- 120ml light soy sauce
- 10ml sesame oil
- 1 tbs white sesame seeds

1.For the dressing, place all ingredients and 100ml water in a bowl and stir to combine. Set aside.

2.Arrange the salmon in a circle on a serving plate. Combine the carrot, daikon, beetroot, seaweed salad and pomelo in a bowl and toss to combine. Pile the salad into the centre of the serving plate and drizzle with dressing. Top with fried wonton wrappers, to serve.
