Scallop tartare
Ever tried scallop tartare? The delicate flavour of the scallop really shines, especially with the zesty dressing. 

Ingredients (8)

  • Finely grated zest of 1/2 lemon
  • 1 tbs rice wine vinegar
  • 2 tsp soy sauce
  • 1 tsp each fish sauce and sesame oil
  • 2 tbs sunflower oil
  • 8 large scallops, thinly sliced horizontally
  • Finely grated zest of 1 lime
  • Mixed herbs, to serve

Method

  • 1.
    Preheat the oven to 100°C. Scatter zest and 1 tbs sea salt on a baking tray, then roast, stirring 2-3 times, for 12-15 minutes until dry. Transfer to a mortar and pestle and grind to a coarse powder.

    Combine the vinegar, soy sauce, fish sauce and oils in a bowl. Set aside.
  • 3.
    Arrange scallops on plates. Sprinkle with lime zest, top with a pinch of lemon sea salt and drizzle with soy dressing. Scatter with herbs, season and serve.
