Quick cucumber, garlic and chilli pickle

This simple Asian pickle hits all the spots. See notes for where it's best used.
Ingredients (5)
- 1/2 large cucumber (170g), halved lengthways, deseeded and thinly sliced
- 1/2 long red chilli, sliced (deseeded if you prefer less heat)
- 1 garlic clove, peeled and crushed, or 1 tsp garlic paste
- 50g caster sugar
- 50ml rice wine vinegar or cider vinegar

1.Combine all ingredients and a large pinch of fine sea salt in a bowl and stir together. Leave to sit for a minimum of 15 minutes, then drain and serve.
