This vibrant, crunchy salad serves 6 as a side.

Ingredients (5)

  • 3 mandarins, halved
  • 1 tbs chardonnay vinegar
  • 1 tbs extra virgin olive oil
  • 2 heads radicchio, leaves separated, torn
  • 1 bunch sorrel, thickly sliced

Method

  • 1.
    Heat a chargrill pan to high heat and grill mandarin, flesh-side down, for 6 minutes or until burnt. Remove from heat and stand until cool enough to handle, then juice into a bowl. Whisk vinegar, oil and a pinch of salt flakes into mandarin juice.
  • 2.
    Combine radicchio and sorrel in a large bowl and gently toss through dressing. Transfer to 2 large serving platters.
