This zesty palate cleanser of a dessert couldn't be easier to whip up.

Ingredients (7)

  • 250g caster sugar
  • 1/4 cup (60ml) glucose syrup
  • Juice of 1 lemon
  • 1/4 cup (60ml) Skinos (Greek liqueur – substitute other Mastiha liqueur, from selected bottle shops)
  • 700g frozen raspberries
  • 4 eggwhites
  • Fresh raspberries, to serve

Method

  • 1.
    To make syrup, place sugar, glucose and 1 cup (250ml) water in a small saucepan over medium-high heat. Cook, stirring constantly, until sugar dissolves, then stir through lemon juice. Transfer to a bowl and set aside to cool.
  • 2.
    Whiz sugar syrup, Skinos and frozen raspberries in a food processor for 1 minute or until smooth. Add eggwhites and whiz for 2 minutes or until raspberry mixture becomes light in colour. Carefully strain through a fine sieve into a loaf pan. Cover and freeze for 6 hours to overnight or until firm. Serve with fresh raspberries.
