Red curry prawn skewers
Keep it simple with this healthy, Asian-inspired summer starter.

Ingredients (7)

  • 12 green prawns, peeled, deveined, tails intact
  • 2 tablespoons coconut milk
  • 1 tablespoon red curry paste
  • Steamed rice, to serve
  • Lime wedges, to serve
  • 1 long red chilli, seeds removed, finely sliced, to garnish
  • Coriander sprigs, to garnish

Method

  • 1.
    Preheat a chargrill or barbque to high and soak 4 wooden skewers in water for 10 minutes (to prevent skewers from burning when cooked).
  • 2.
    Thread 3 prawns onto each skewer. Combine the coconut milk and curry paste in a bowl, then brush over the prawns. Cook on the grill for 1-2 minutes each side or until cooked through. Serve on steamed rice with lime wedges, and garnish with sliced chilli and sprigs of coriander.
