Valli Little's refrigerator slice
This no-bake slice is easy to make and even easier to to devour.

Ingredients (14)

  • 125g unsalted butter
  • 1/2 cup (110g) caster sugar
  • 2 tablespoons golden syrup
  • 2 cups (about 200g) crushed digestive biscuits
  • 2 tablespoons cocoa powder, sifted
  • 2 tablespoons desiccated coconut
  • 1 teaspoon vanilla extract
  • 1 egg, beaten
  • 200g pkt chocolate freckles
  • 100g white chocolate, melted

Icing

  • 50g unsalted butter
  • 1/4 cup firmly packed (50g) brown sugar
  • 3 tablespoons (1/4 cup) cocoa, sifted
  • 1/4 cup (60ml) thickened cream

Method

  • 1.
    Grease and line an 18cm x 25cm lamington pan with baking paper.
  • 2.
    Place butter, sugar and syrup in a pan over low heat, and stir until butter melts. Add to a bowl with biscuit crumbs, cocoa, coconut, vanilla and egg. Beat to combine. Spread into pan and chill for 2-3 hours.
  • 3.
    For icing, place butter and sugar in a pan and melt over low heat. Add cocoa and cream, stir to combine, then cool.
  • 4.
    Pour icing over slice and top with broken freckles. Drizzle with chocolate.
