Valli Little's refrigerator slice
This no-bake slice is easy to make and even easier to to devour.
Ingredients (14)
- 125g unsalted butter
- 1/2 cup (110g) caster sugar
- 2 tablespoons golden syrup
- 2 cups (about 200g) crushed digestive biscuits
- 2 tablespoons cocoa powder, sifted
- 2 tablespoons desiccated coconut
- 1 teaspoon vanilla extract
- 1 egg, beaten
- 200g pkt chocolate freckles
- 100g white chocolate, melted
Icing
- 50g unsalted butter
- 1/4 cup firmly packed (50g) brown sugar
- 3 tablespoons (1/4 cup) cocoa, sifted
- 1/4 cup (60ml) thickened cream
Method

1.Grease and line an 18cm x 25cm lamington pan with baking paper.

2.Place butter, sugar and syrup in a pan over low heat, and stir until butter melts. Add to a bowl with biscuit crumbs, cocoa, coconut, vanilla and egg. Beat to combine. Spread into pan and chill for 2-3 hours.

3.For icing, place butter and sugar in a pan and melt over low heat. Add cocoa and cream, stir to combine, then cool.

4.Pour icing over slice and top with broken freckles. Drizzle with chocolate.
