Ingredients (7)

  • 4 pears, peeled, cored, chopped
  • 2 tbs caster sugar
  • 1 tbs water
  • 1 bunch rhubarb, trimmed, cut into 1cm-thick slices
  • ½ cup craisins
  • 1 tbs balsamic vinegar
  • 1 tsp finely grated ginger

Method

  • 1.
    Combine pear, sugar and water in a saucepan over medium heat. Cover and cook, stirring occasionally, for 8 minutes or until just tender. Stir in rhubarb, craisins, vinegar and ginger. Cover. Increase heat to medium-high and bring to the boil. Uncover and cook for 8 minutes or until the rhubarb is soft and the liquid is absorbed. Transfer to a serving bowl.
