Rice noodle salad with smoked trout
Quick and healthy, this Asian inspired rice noodle and smoked trout meal will have everyone rushing to the table.
Ingredients (11)
- 400g thin rice noodles
- 4 spring onions, thinly sliced on the diagonal
- 1/2 telegraph cucumber, thinly sliced into long diagonal slices
- 1 cup thinly sliced snow peas (halved if long), blanched
- 1 cup coriander leaves
- 1/2 cup mint leaves, torn if large
- 2 tablespoons sweet chilli sauce
- 1/4 cup (60ml) lime juice
- 1 teaspoon sesame oil
- 1 teaspoon light soy sauce
- 2 x 180g smoked trout fillets

1.Place the rice noodles in a bowl, cover with boiling water and leave to stand for 5 minutes or until softened. Rinse under cold water and drain well. Place in a large bowl with the spring onion, cucumber, snow peas, coriander leaves and torn mint leaves.

2.In a small bowl, whisk the sweet chilli sauce, lime juice, sesame oil and soy sauce until combined. Flake the smoked trout fillets into bite-size pieces, discarding any bones. Add to the salad with the dressing and toss gently to combine.
