Get the whole family involved with this classic DIY dinner idea.
Ingredients (8)
- 350g cooked chicken, shredded
- 2 tablespoons chopped roasted peanuts
- 2 tablespoons chopped fresh coriander, optional
- 1 carrot, grated
- 10cm cucumber, grated
- 4 spring onions, finely chopped
- 375g rice paper wrappers
- 2 tablespoons hoi sin sauce, plus extra to serve
Method

1.Combine the chicken, peanuts, coriander, carrot, cucumber and spring onions in a medium bowl. Set aside.

2.Soften rice paper wrappers by dipping each in a bowl of warm water and counting to 10 before spreading them on a flat board.

3.Spread a little hoi sin sauce on each wrapper and top with some chicken mixture. Fold in the sides then roll up to enclose the filling.

4.Serve with the extra hoi sin sauce for dipping. (These are best eaten just after making.)
