Get the whole family involved with this classic DIY dinner idea.

Ingredients (8)

  • 350g cooked chicken, shredded
  • 2 tablespoons chopped roasted peanuts
  • 2 tablespoons chopped fresh coriander, optional
  • 1 carrot, grated
  • 10cm cucumber, grated
  • 4 spring onions, finely chopped
  • 375g rice paper wrappers
  • 2 tablespoons hoi sin sauce, plus extra to serve

Method

  • 1.
    Combine the chicken, peanuts, coriander, carrot, cucumber and spring onions in a medium bowl. Set aside.
  • 2.
    Soften rice paper wrappers by dipping each in a bowl of warm water and counting to 10 before spreading them on a flat board.
  • 3.
    Spread a little hoi sin sauce on each wrapper and top with some chicken mixture. Fold in the sides then roll up to enclose the filling.
  • 4.
    Serve with the extra hoi sin sauce for dipping. (These are best eaten just after making.)
