Roast beef salad

This is our spin on roast beef and mustard - enjoy!
Ingredients (8)
- 250g sirloin steak
- 2 boiled potatoes, peeled, sliced
- 1/2 red onion, sliced
- 1 tbs whole-egg mayonnaise
- 1 tbs Dijon mustard
- 8 semi-dried tomatoes, thinly sliced
- 6 black olives, pitted, thinly sliced
- 2 cups rocket leaves or frisée lettuce
Method

1.Season the steak on both sides with freshly ground black pepper. Barbecue or grill over medium-high heat for 3 minutes on each side for medium-rare. Rest for 5 minutes, then slice on the diagonal.

2.Divide the potato slices between two plates. Top with onion rings. Spoon half the mustard and mayonnaise over. Top with tomatoes, olives, rocket and beef slices.

3.Season to taste, then spoon the remaining mustard and mayonnaise over the top.
