Roast vegetable and goat's cheese pizza

Ingredients (10)
- 1 red onion, cut into wedges
- 1½ tbs olive oil
- 1 red capsicum, sliced
- 1 yellow capsicum, sliced
- 1 large zucchini, thinly sliced
- 2 tsp chopped thyme leaves
- 3 pizza bases
- 3 tbs basil pesto
- 9 cherry tomatoes, halved
- 120g soft goat’s cheese, crumbled

1.Preheat oven to 180ºC. Line a baking tray with baking paper. Place onion on the tray. Drizzle with 2 teaspoons olive oil and bake for 10 minutes. Meanwhile, toss the capsicum and zucchini with the thyme and remaining olive oil. Season with salt and pepper and add to the onions. Bake for a further 10 minutes or until vegetables are tender.

2.Increase the oven to 200°C, or heat an electric pizza oven, and place the pizza bases on 3 lightly oiled pizza trays. Spread each with 1 tablespoon pesto, then arrange the roasted vegetables and the tomatoes over the bases.

3.Top with crumbled goat’s cheese, then bake the pizzas for 8-10 minutes until the cheese is lightly golden and the crusts are crisp. Cut into wedges and serve with a rocket salad, if desired.
