Roasted eggplant and beef spirals
Providing nearly half your daily iron and zinc needs, this meal will put a spring in your step. It’s also a great source of antioxidants and protein, vital for nurturing your body. 

Ingredients (10)

  • 1 eggplant
  • 2 capsicums
  • 1 tbsp olive oil
  • 500g beef mince
  • 2 garlic cloves, chopped
  • 200g tomato paste
  • 1 x 425g can diced tomatoes
  • 100g spinach
  • 500g spiral pasta
  • 100g feta cheese, crumbled for serving

Method

  • 1.
    Roast eggplant and capsicum in a hot oven for 20 minutes at 220°C. Peel and chop, discarding skin and seeds and set aside.
  • 2.
    Heat oil in nonstick pan and fry beef and garlic until browned.
  • 3.
    Add the tomato paste, diced tomatoes, spinach, eggplant and capsicum. Simmer for 20 minutes.
  • 4.
    Meanwhile, cook pasta according to packet directions and drain. Toss sauce mixture through the pasta and serve with crumbled feta.
