Roasted eggplant and beef spirals

Providing nearly half your daily iron and zinc needs, this meal will put a spring in your step. It’s also a great source of antioxidants and protein, vital for nurturing your body.
Ingredients (10)
- 1 eggplant
- 2 capsicums
- 1 tbsp olive oil
- 500g beef mince
- 2 garlic cloves, chopped
- 200g tomato paste
- 1 x 425g can diced tomatoes
- 100g spinach
- 500g spiral pasta
- 100g feta cheese, crumbled for serving
Method

1.Roast eggplant and capsicum in a hot oven for 20 minutes at 220°C. Peel and chop, discarding skin and seeds and set aside.

2.Heat oil in nonstick pan and fry beef and garlic until browned.

3.Add the tomato paste, diced tomatoes, spinach, eggplant and capsicum. Simmer for 20 minutes.

4.Meanwhile, cook pasta according to packet directions and drain. Toss sauce mixture through the pasta and serve with crumbled feta.
